Plants containing a high amount of polyphenol oxidase were studied for the purpose of developing an extracting method for genuine anthocyanins. Accounts that were examined included: the decolorizing action of polyphenol oxidase to anthocyanins, the deactivation of polyphenol oxidase with tannins, and the interactions between anthocyanins and the tannins. Anthocyanins were decolorized with polyphenol oxidase, and the rate depended on the hydroxylation pattern of the B ring of the anthocyanins and the glycosylation of the molecules. Gallotannin interacted with polyphenol oxidase to form a complex without oxidase activity. Gallotannin stabilized anthocyanins by complexing hydrophobically with the latter.
