So far we have elucidated that off-odor substances of a deteriorated lemon are produced from citral, a monoterpene aldehyde in lemon and the major components responsible for off-odor are pcymene and 2-p-tolyl-propene. In this paper, we deal with identification of some other minor components which are off-odor substances produced by the acid degradation of citral.<br> Citral was incubated at 38°C for 8 months in hydrochloric acid aqueous solution (pH 2.0). The deteriorated citral was extracted with ether and fractionated into three parts; the acidic fraction, the neutral fraction I and II. The acidic fraction (ethyl esterified) and neutral fraction I were further fractionated by neutral alumina column chromatography. Each component was purified by column or thin-layer chromatography. Isolated components were investigated by GC, EI-MS, FI-MS, IR, 1H-NMR and 13C-NMR.<br> In the acidic fraction, geranic acid (cis and trans), 3, 7-dimethyl-7-ethoxy-2 (E)-octenoic acid and carvacrol were identified. In the neutral fraction I, 2-ethoxy-1-methyl-4-isopropylbenzene, 1-p-menthene-8-ethoxy-3-one, piperitenone and 1-p-menthene-8-hydroxy-3-one were identified. They seem to be significant off-odor substances of a deteriorated lemon, except for 1-p-methene-8-hydroxy-3-one.
