A series of investigations was carried out to study the jelly formation ability of agarose prepared by saponification, carboxymethylation, and phosphoration.<br> Agarose was obtained from Gelidium Amansii with cetylpyridinium chloride.<br> It was recognized that in a sample prepared by saponification, carboxymethylation, and phosphoration, the larger the value of [η], the larger the water-hold capacity. Furthermore, in case of the samples with almost same [η] values, the less the value of (SO3/COOH)×(SO3+COOH)×100, the larger the water-hold capacity. Saponification and carboxymethylation under proper conditions increased the water-hold capacity. For example, water-hold capacity of a sample of mole-ratio 1:1 (sample: NaOH) increased by 22% after a saponification for 1 hr at 100°C and that of a sample of mole-ratio 1:3:2.4 (sample:NaOH:CH2ClCOOH) increased by 14% after carboxylation for 3 hr at 40°C.
