Abstract

Bacteriological survey was performed with carcasses and chilling water at 82 broiler and 31 layer processing plants in Japan in 1996. Detection rates from carcasses in broiler and layer plants were 86 to 90% and 100% for coliform group, 37% and 53 to 55% for Staphylococcus aureus, 18 to 21% and 36 to 48% for Salmonella, and 31 to 33% and 36 to 45% for Campylobacter, respectively. With time of processing, the detection rates tended to increase, and most plants using chlorinated water for chilling were producing more hygienic carcasses. Seven serovars of salmonella were isolated and S. Hadar and S. Infantis were more predominant in broiler processing plants, while 12 serovars were isolated and S. Corvallis was the most predominant in layerprocessing plants.
