β-Glucosidase Activity in the Royal Agaricus Mushroom

Description

Various exoglycosidase activities were examined in Taiyo-no-kinoko (the roval agaricus mushroom). The mushroom showed relatively high β-glucosidase activity and α-mannosidase activity among the enzyme activities examined. β-Glucosidase was partially purified and characterized. The reaction optimal pH was 4.8. This activity was relatively stable for heat. This activity was affected by some metal ions, manganese showed the strongest inhibitory effect among the metals examined. The inhibitory effect by manganese was in a manner of dose dependence. This report suggests that there may be at least two enzymes involving β-glucosidase activity in this mushroom.
