Abstract

After 2000, many problems involving consumer confidence and food safety have resulted in changes within the Japanese distribution industry. This trend is symbolized by the traceability or 'kaogamieru' vegetables, for which the identity of the produce farmer is displayed at the store. The present paper discusses the new distribution systems through a case study of the supermarket supply systems. 'Kaogamieru' vegetables are realized by a specification of the distribution system. Although risks increase throughout the system, risks are dispersed little by little at each stage of production and distribution, including the supermarket. The specification distribution system differs from the mass distribution system, in which risks are concentrated on middle traders or in production regions. In addition, the production-distribution-consumption relationship has become a close and continual connection based on mutual trust and cooperation. The specification distribution system indicates a new way of creating value through distribution and also reveals the limitations of the mass production and distribution systems. The specification distribution system, which is supported by the mass distribution system and consumer demand for lower prices, will continue to coexist with the mass distribution system in the Japanese distribution industry.
