Abstract

This study was undertaken to investigate the distribution of minerals in different muscles of swine and in various meats, and to determine if the mineral elements found are constantly present in various muscles used.<br>For this purpose, minerals in the following muscles and organs were determined qualita tively by the spectrography: M. Semimembranosus, M. Longissimus dorsi, M. Semispinalis capitis, M. Masseter, M. Gastrocnemius, Heart, Liver, Pancreas and kidney from swine, and M. Semimembranosus from cattle, horse, chicken and sheep.<br>Seventeen minerals were detected in all, and 12 minerals of the all detected, Na, K, Mg, Ca, Al, P, Cu, Fe, Si, Zn, Pb and Mn were found in all of 18 pork samples used, while Ag, Cr, Mo, Ba and Sn were found in 16, 12, 10, 8 and 5 samples of those, respectively.<br>B, Ni, Co, Cd, As, Be, Ce, Cs, Hg, Li, Sr and Zr could not be detected in pork samples used.<br>Twelve minerals detected in the pork samples were also found in beef, horse meat, chicken and mutton samples used.
