Studies on Molds Found in Mold Starter for Blue Cheese

Description

Investigation was made on the distribution of mold species in Chr. Hansen's mold powder. Isolated strains were examined for cultural and microscopical characteristics for classification. Experimental results were as follows.<br>(1) All strains isolated were identified as those of Penicillia. Of these strains, 16 were identified as Penicillium roqueforti THOM, one was as Pen. roqueforti Albino type, 17 were as Pen. corymbiferum WESTLING, 5 were as Pen. commune THOM, and one was as Pen. crustosum THOM. The remaining 46 strains were presumed to be of Pen. roqueforti species. (2) As for the frequency of appearance in the tested mold powder, Pen. roqueforti strains ranked first and was followed by Pen. corymbiferum. Pen. commune and Pen. crustosum strains were found at a very low frequency of appearance.
