Nutritive value and hypocholesterolemic effect of alfalfa leaf protein concentrate (LPC) s prepared from two different varieties, Dupuits and Natsuwakaba, were determined in chicks.The content of medicagenic acid, toxic alfalfa saponin, was much higher in the DuPuits LPC than in the Natsuwakaba LPC, but the chemical composition, amino acid composition, gross energy, available energy and digestibilities of dry matter and nitrogen were the same. When onethird of crude protein in the casein-amino acid basal diet was replaced by either of the LPCs, no adverse effect was observed if an adequate amount of methionine was added.However, when DuPuits LPC was used as a sole protein source, growth rate was significantly depressed and improved by the dietary cholesterol addition, which were associated with the changes of feed intake. Feeding Natsuwakaba LPC as a sole protein source caused no significant effect on chick performance.When both the LPCs were used as the sole protein source, plasma HDL-and LDL-cholesterols were reduced, regardless of the cholesterol addition, which were not related to the medicagenic acid content of the LPCs.
