Abstract

In poultry slaughter process, after defeathering, some carcasses are observed to have exposed humerus of the wing after breaking through the skin. Thus, it is necessary to investigate the cause of wing break, which is an open dislocation of the humerus from the elbow joint, and identify preventive measures. Here, we examined the changes in cardiac activity from the start of bloodletting to cardiac arrest in the broiler slaughter process. For this, we anesthetized poultry to perform bloodletting under controlled consciousness and allesthesia. Then, electrocardiography was performed to assess the vital reactions associated with experimental slaughter and bloodletting. The electrocardiogram showed that the heart rate began to decrease 170-250 s after beginning bloodletting. Disappearance of P waves and premature contraction occurred afterward. Disappearance of the QRS waveform was regarded as cardiac arrest, and the time of cessation of cardiac muscle contraction was 597.8±96.4 s. The wing-flapping reflex might have occurred 30-200 s after beginning bloodletting. Thus, we suggest that wing break occurred in the bloodletting area in the processing line.
