Abstract

Domestic food service industry in Japan has almost twenty-four trillion yen market. Few academia has paid attention to study this industry because its relatively low entry barriers tended to hide real problems in the industry. Chain restaurant business, however, has been in a difficult situation and may face a critical turning point in the near future. In this paper, the authors would like to propose a fundamental framework to study on service management in the food service industry based on a value chain concept.
