抄録

To examine the hypotensive effects of beni-foods that were made from beni-koji, we prepared beni-bread, beni-miso, beni-soy sauce and beni-somen. Male spontaneously hypertensive rats (SHR) were fed on one of the semi-purified diets containing these beni-foods. These feeding experiments indicated that all beni-foods had hypotensive activities. However, the activity of beni-somen was reduced by boiling for 2min 50 sec, suggesting the loss of water-soluble compounds with hypotensive activity.
