The alginate lyase activities of the fronds of Undaria pinnatifida (HARVEY) SURINGAR (Wakame) were investigated to elucidate the elasticity retention of fronds caused by ash-treatment. With sun-dried fronds, about half the alginate lyase activity remained, while the activity decreased remarkably when the fronds were treated with ashes containing moderate amounts of phenolphthalein-alkalinity and water-extractractable calcium. However, less lowered activities were found in the fronds of higher lyase activities after treament with ashes of lower alkalinity and water-extractable calcium content; such fronds became softer. Thus it seems that the inactivation of alginate lyase in algal fronds by treatment with ashes is an important factor in preventing the frond-softening upon manufacture of the “haiboshi” products.
