In order to develop a simple and objective method to evaluate egg yolk color, effects of source of light and observers on the Roche Color Fan (RCF) scores of egg yolks were determined, and regression between the RCF scores and the values obtained by use of a Minolta CR-200 reflectance colorimeter was acquired.<br>Total 150 laying hens of 98 weeks of age were divided into 5 groups of 30 hens each. Paprika extracts were added to a commercial layer diet at 5 levels from 0 to 1800mg per kg of the diet. Eggs were collected from each group on 14th and 16th day after switching to the experimental diets. RCF scores off egg yolks ranged between 8 and 12. RCF scores of these eggs were statistically analyzed in a factorial arrangement with light sources (sunlight and fluorescent light) and observers (five men and a woman).<br>The results showed that the RCF scores under the sunlight were significantly (P<0.05) higher than those under the fluorescent light, and averages and standard deviations of RCF scores were affected by observers significantly (P<0.05).<br>When the reflectance colorimeter was applied to RCF (1987 ed.) itself, values of L*, a*, b* and Yellow Index (YI) to RCF were always higher than those to egg yolks. It was concluded that the direct color values of RCF itself by the colorimeter could not be applied to estimate RCF scores of egg yolks.<br>On the other hand, there was a good correlation between the color values of egg yolks by the colorimeter and average RCF scores (ARCF) determined by 6 persons. Coefficients of linear regression between each one of color values of L*, a*, b* and YI by the colorimeter and ARCF were always significant (P<0.01). The highest coefficient for the regression was obtained between a* and ARCF. Coefficient of multiple regression between color values of L*, a* and b* by the colorimeter and ARCF was also significant (P<0.01). The estimated RCF scores by the multiple regression, however, gave almost the same values as estimated by the linear regression between a* and ARCF. It was concluded that RCF scores of egg yolks could be practically and objectively estimated by the following regression: ARCF=0.534a*+9.601 (r=0.914).
