In order to clear the behavior of glycosidic linkages towards ozone, cellobiose and lactose, as model compounds of carbohydrates, were ozonized under aqueous and acidic conditions. Initial pH values were adjusted with acetic acid (pH 3, 4 and 5) and trifruoro acetic acid (pH1 and 2). All reaction products were analyzed by gas-liquid chromatography.<BR>The results are summarized as follows.<BR>1) Lactose was ozonized at pH 5.3 and 3.0. Among the reaction products, glucose, galactose and galactonic acid were detected, whereas gluconic acid was hardly detected.<BR>2) The yield of glucose were always higher than that of galactose. There were no differences between glucose and galactose and between gluconic acid and galactonic acid in the disappearing speed on ozonation. These results indicate that ozonation of lactose caused the oxidative cleavage as well as the hydrolytic cleavage of the glycosidic linkage.<BR>3) The ratios of hydrolytic cleavage to oxidative cleavage during ozonation of lactose were 3.6 at pH 3.0 and 3.1 at pH 5.3.<BR>4) Cellobiose was ozonized under acidic conditions. Among the reaction products, glucose, gluconic acid and arabinose were detected.<BR>The effect of pH on the degradation of cellobiose with ozone was examined. Cellobiose was most stable in the range of pH 2 to 3.
