Abstract

<p>All human activity, including food consumption, will have an impact on the environment. To improve the sustainability of food consumption, various “food techs”, such as gene editing, plant-based meat or cultured meat, are being developed. On the other hand, soybeans, chickpeas or cowpeas have been traditionally used as a protein source instead of meat in many parts of the world. We should aim for both enrichment of our diets and sustainability by utilizing new technologies and the experience accumulated in the food cultures around the world. The cognitive load may increase in food decision making based on multiple aspects of value. It is important to make the pro-social motivations of consumers explicit through effective communication using ICT.</p>
