Description
エタノールは酒類の主成分のひとつでありながら、ヒトにおける味覚の研究報告は比較的少ない。報告により不一致があるが、エタノール自体には苦味、甘味があり、ビール、ワインなどのアルコール飲料の中では苦味を強める傾向がある。動物においてはエタノールの味の感じ方に種差があり、マウスでは系統差がみられる。エタノール濃度は溶液の粘度に影響し、「こく」と正の相関がある。
