Description

<p> Fermented dairy products are familiar foods that humans have prepared and consumed for millennia. In recent years, physiological functions of lactic acid bacteria and peptides and fatty acids generated during milk or cheese fermentation have been widely reported. In particular, a number of new studies have elucidated the effects of fermented dairy products on cognitive function. Epidemiological and clinical evidence has indicated the preventive effects of fermented dairy products against dementia. The authors of the present study recently demonstrated that consuming dairy products fermented with Penicillium candidum prevents the development of Alzheimer's disease in a mouse model. The study also identified oleamide and dehydroergosterol as the active ingredients in Camembert cheese responsible for inhibiting dementia. In this review, the protective effects of fermented dairy products and their components on cognitive function and their prospects for future clinical development are discussed.</p>
