Abstract

<p>In the nutritional guidance of salt restriction, evaluation methods of salt intake conventionally used lack either convenience or objectivity. We examined a new indicator based on patient behavior under nutritional guidance using patients with heart failure. A 120g vegetable salad was prepared at nutritional guidance, and the patients were asked to season as usual. The amount of salt contained in the seasoning was calculated, and the salt intake was evaluated (hereinafter referred to as the salad salt amount). In comparison with age, the group of 75 years of age or older had a significantly higher salad salt amount than the one of younger than 75 years of age. The salad salt amount showed a significant correlation with the total points of the salinity check sheet, which is one of the meal investigation methods, and the extracellular fluid ratio, which is the indicator of fluid retention. These results not only indicate that this indicator is useful as a method of evaluating salt intake based on patient behavior, but also means that “behavior” in salt intake habits is associated with consciousness, attitude, and fluid retention in patients with heart failure.</p>
