<p>DIC Corporation is manufacturing and selling Spirulina powder and Spirulina blue extract from Spirulina as a food natural color. Spirulina powder is deep green and has long been used to color a lot of green tea products. It has relatively high heat resistance, and in recent years, its use has expanded to other foods. Spirulina blue extract is a valuable natural blue pigment and has long been used in Japan as a food additive, and in recent years it has rapidly expanded overseas, including EU and United States. The blue pigment is a kind of protein and called phycocyanin, which is vulnerable to heat, light, alcohol, and low pH. Regarding phycocyanin, DIC confirmed that to add high concentration of sugar solutions improves heat stability, to use with antioxidants improves light stability, and to use with other proteins improves pH stability.</p>
