Oral consumption of sulforaphane precursor-rich broccoli supersprouts decreases serum levels of advanced glycation end products in humans

Reducing sugars can react non-enzymatically with the amino groups of proteins to initiate a complex series of rearrangements and dehydrations, and then to produce a class of irreversibly cross-linked macroprotein molecules termed advanced glycation end products (AGE). The formation and accumulation of AGEs in numerous tissues have been known to progress in a normal aging process. There is a growing body of evidence that AGE and their receptor (RAGE) interaction evoke oxidative stress and inflammatory and reactions, thereby being involved in cardiovascular disease, Alzheimer’s disease, cancer growth and metastasis, and osteoporosis. We have previously found that sulforaphane not only inhibits the formation of AGE in vitro, but also reduces RAGE expression in vascular cells. In this study, we examined whether oral consumption of sulforaphane precursor-rich broccoli supersprouts could decrease serum AGE levels in humans. Daily intake of broccoli supersprouts for 2 months significantly decreased body weight, body mass index and waist circumference, and reduced HbA1c, AGE, diastolic blood pressure, total and high-density lipoprotein cholesterol, and blood urea nitrogen levels. It also raised consciousness of eating healthy food. Our present study suggests that intake of sulforaphane precursor-rich broccoli supersprouts could suppress the formation of AGE in humans.
