Abstract
<p>The purpose of this study is to explore the robustness of the supply chain of raw vegetables for processing. A case study is conducted on potatoes for which about half of the domestic production is shipped for processing, including starch. In this study, we first examine what factors have contributed to this difference in robustness against disasters depending on the application. Second, we examine the production system in the production areas and check benefits for the potato producers to sell their production to potato chips manufacturers. In the case of raw food use, flexible transactions were conducted through the supply and demand adjustment function via the wholesale market. On the other hand, potato chips have a distribution structure that is efficient in normal times but vulnerable in times of emergency. The support provided by Calbee Potato for production and collection/shipping played an important role in the expansion of the production area.</p>
