Determination of Cyanide and Cyanoglycosides in Foods Containing Apricot Seeds by HPLC with Fluorescence Detection

<p>In recent years, safety concerns pertaining to so-called health foods have spread. In food products containing apricot seeds, it is necessary to decrease the content of cyanide and cyanoglycosides during the manufacturing process so that the finished product complies with food safety concerns. We developed the analytical methods for determining free cyanide ions and cyanoglycosides in foods containing apricot seeds using HPLC with fluorescence detection. In the analytical method for cyanoglycoside in foods containing apricot seeds, since both cyanide and cyanoglycosides were thought to be detected, the analytical method for cyanoglycoside was evaluated by recovery tests using foods containing apricot seeds. The cyanide analysis in the analytical method for cyanoglycoside showed a trueness of 96.4 %, repeatability accuracy of 1.9 %, and in-house accuracy of 8.1 %. For the analysis of cyanoglycosides in the analytical method for cyanoglycoside, the trueness was 87.4 %, the repeatability accuracy was 0.4 %, and the in-house accuracy was 9.2 %. This suggests that these analytical methods can be used for the differential determination of free cyanide and cyanoglycoside in foods containing apricot seeds.</p>
