Description
Production of pyruvic acid from saccharified citrus peel extract by dried cells of Debaryomyces coudertii IFO 1381 was investigated. The addition of ATP as an energy source in the presence of a high concentration of phosphate buffer caused effective production of pyruvic acid. ATP could also be replaced by glouse. The cells which have high productivity of pyruvic acid were obtained when galacturonic acid was used as a carbon source. Under the optimum conditions, about 80-100 μmol/ml of pyruvic acid was produced in 10 h.
