The effect of ozone exposure (concentration : 0 and 0.3 ppm) during cultivation of Winter mushroom (Flammulina velutipes (Curt. : Fr) Sing.) was investigated on the weight and chemical composition (diameter of pileus, lenght of stipe, water, protein, lipid, carbohydrate and ash as major constituents : and thiamin, riboflavin and ascorbic acid as vitamins) on dry matter basis of fruit body i. e., pileus, stipe and the whole. As to 0 day after the ozone exposure treatment, increase was observed on water, protein, ash, thiamin, riboflavin and ascorbic acid in the whole bodies. On the other hand, as to 5 days after the ozone exposure treatment, an increase was observed on diameter, content of lipid and carbohydrate in pileus, on the length, content of carbohydrate, thiamin and ascorbic acid in stipe, and on the content of protein, carbohydrate, thiamin and ascorbic acid in the whole.
