Description
The bacterial populations of the three subcultures prepared from a commercial freeze-dried mixed-strain starter culture were 43-54 % Lactococcus lactis ssp. cremoris and 46-57 % Lactococcus lactis ssp. lactis biovar. diacetylactis. No strains of Lactococcus lactis ssp. lactis and Leuconostoc mesenteroides ssp. cremoris were detected. No phage sensitive strains were detected except one L. lactis ssp. cremoris strain from the 20th subculture. On the each subculture tested, L. lactis ssp. cremoris isolates were divided into four plasmid-groups, and L. lactis ssp. lactis biovar. diacetylactis isolates into two groups. This indicated that the populations of the subcultures became more simple than that of the original starter culture. Strains having high acid-producing activity showed strong proteolytic ability. Although the number of fast-strains was limited, the subcultures functioned as fast acid-producing starters.
