The silver nitrate was added to examine the influence of the a-amylase on distribution of phospholipid during pasting process of wheat flour suspension. The peak viscosity rose as a result of measuring the viscosity by using the Rapid Visco Analyzer. However, the α-amylase did not influence the phospholipid in the pasting process, especially the distribution of LPC.
