The purpose of this study is to examine the process by which the ideology called “EIYO" became widespread. “EIYO" is the normative thought in which people control their diet for the sake of their health. I focus on nutritional practice in Japan during the Taisho period. I pay attention to both the dietary practices performed by nutrition scientists and the acceptance of them by people. And I analyzed the following three things with historical materials. First of all, what is the purpose of eating practice by "EIYO-KONDATE" of the nutrition scientist Dr.Saiki? Second, when and how did people approve of Dr.Saiki's nutritional science-based diet? Third, how supportive was Dr.Saiki's relationship with the people who accepted him? As a result of the analysis, Dr. Saiki's cooking practice received a backlash from women in the middle class of the city. However, at the time of the Great Kanto Earthquake, it was approved socially for the first time by providing free meals to many people suffering from hunger. In addition, Dr.Saiki gained scientific evidence by completing this charity project. This scientific evidence gave Dr.Saiki a new logic that nutrition allows dietary control for health. The conclusion of this study is that people's approval and experience of the eating practice strongly influenced Dr.Saiki, and as a result, a dietary method that cares about nutrition for health has come to be proposed. In this way, the concept of "EIYO" shaped so that it can be disseminated.
