Evaluation of physiological functionalities of amazake in mice.

Amazake is a traditional Japanese beverage made from sake cake or rice-koji produced in sakebrewing process. Recent progressive studies showed that sake cake and rice-koji had various physiological functionalities, such as anti-hypertension, anti-obesity and anti-amnesia. Such functionalities were anticipated in amazake, so we investigated the effects of amazake in mice. Administration of amazake to mice fed a high fat diet for 2 weeks suppressed increases in body weight, serum concentrations of triglycerides, and intraperitoneal adipose depots accumulations. When amazake was orally administrated to salt-induced hypertensive mice, blood pressure showed a significant decrease after 50days of breeding. When impairment of learning and memory in mice was induced by a subcutaneous injection of scopolamine, prior oral administration of amazake prevented a decrease in performance for memory and learning even in a single dose. These results demonstrated that amazake has three types of health-promoting benefits--anti-obesity, anti-hypertension, and anti-amnesia--resulting from attributions of sake cake, rice-koji, and other elements of sake-brewing. These functionalities indicated that amazake should be newly recognized as a natural and healthy drink for the prevention of lifestyle-related diseases.
