Abstract

The chemical structure of coffee arabinogalactan was studied by enzymatic and chemical methods. The arabinogalactan was hydrolyzed by a purified galactanase of Rhizopus niveus, and the products were separated by Sephadex G-15 gel filtration and paper chromatography.<br> Arabinose, galactose and a galactobiose were isolated in an approximately equal molar ratio. This galactobiose was identified as 6-O-β-galactosyl-galactose. Four other oligosaccharides were also found in the hydrolytic products in small amounts, and their structures were studied.<br> On the basis of these results, the structure of the arabinogalactan was discussed.
