Fifteen Japanese Black, seven Japanese Brown and eight Holstein cows were used to study the muscle distribution and carcass composition in each breed. The slaughter weights of Japanese Black, Japanese Brown and Holstein cows, adjusted to 67.6 months of age, were 486.6, 611.2 and 601.6kg, respectively. The dressing percentages were 62.0, 63.7 and 55.7%, respectively. There was a significant difference in the dressing percentage between Holstein and the other two breeds (P<0.01). The ratios of lean: fat: bone in side carcasses were 56.4:30.5:12.4 for Japanese Black, 54.3:33.9:12.1 for Japanese Brown and 64.9: 16.8:17.7 for Holstein, respectively. The ratio in Japanese Black was very similar to that in Japanese Brown. The weights of lean and bone as percentage of side carcass weight in Holstein cows, were significantly higher than those in the other two breeds (P<0.01), however the fat percentage was significantly lower (P<0.05). There was no significant difference in muscle distribution between Japanese Black and Japanese Brown carcasses. There were, however, significant differences in the percentages of the standard muscle groups in the distal hindlimb (P<0.01), the proximal forelimb (P<0.01), the distal forelimb (P<0.05), the neck to forelimb and thorax to forelimb (P<0.05) between Holstein and the other two breeds. There was a significant difference in the spinal muscles between the Japanese Black and the Holstein breeds (P<0.01). There was no difference in the expensive groups of muscles among the three breeds. The M. longissimus thoracis et lumborum percentages of the total muscle in Japanese Black, Japanese Brown and Holstein cows were 7.7, 7.2 and 6.6%, respectively.
