The incubation trials were conducted to elucidate substrate specificities of feed compositions on nitrite accumulation following the reduction of nitrate ingested into the rumen. Each fibrous fraction prepared from Italian ryegrass (Lolium multiflorum Lam.), Green panic (Panicum maximum Jacq. var. trichoglume Eyles), Ladino clover (Trifolium repens L. var. giganteum) or Green amaranth (Amaranthus viridis L.) as a substrate for microbial fermentation was added with nitrate in a mixed culture of bovine rumen microooganisms and incubated anaerobically in the presence or absence of soluble starch. The addition of soluble starch to incubation medium caused a decline of the apparent formation of nitrite with 0.06%(w/v) and a increment of it with 0.18% (w/v) although the initial reduction of nitrate increased on above both additional levels in comparison with the case of control incubation without soluble starch. The addition of fibrous fraction resulted in an increase of the nitrate reduction close to about 1.8-fold as much as that of a control without fibrous fraction and accelerated the rates of nitrite formation in every plant species during 2hr incubation. In addition, nitrite formation was enhanced in the cultures of fibrous fractions from Italian ryegrass and Green panic and was diminished in those from Ladino clover and Green amaranth by addition of soluble starch.
