Analyzing questionnaire responses of junior high school students, this study examined effects of food lessons that focus on regional dietary culture. The survey was conducted during the period of January through July 2005 and involved two groups. Group 1 was a group of junior high school students who took lessons on dietary culture taught by teachers who are members of the Kumamoto Prefecture Home Economics Circle. Group 2 was a group of students in the Kanto and Kumamoto regions who took lessons on the subject but were taught by teachers who were not members of the Circle. As a result of this survey, the followings were found: 1. A greater effect was found among Group 1 students regarding food-related topics from various contents and the methods of lessons compared to the other group of junior high school stu dents. 2. Group 1 students demonstrated the same levels of skills in food preparation as Group 2. 3. Group 2 students demonstrated changes in their way of living regarding nutrition, health, food preparation, and consumption. Group 1 students, in addition to the changes experienced by Group 2, demonstrated changes in the way they address environmental issues and food safety. Group 1 students also demonstrated an ability to put into practice a way of living guided by their own independent thinking and judgment.
