Abstract

Effect of peroxide on stability of vitamin A in solubilized solution was investigated. Destruction of vitamin A in oily solution, such as corn oil or methyl linoleate, was depended on the peroxide values of oil under unaerobic conditions and also it was accelerated under aerobic conditions. When vitamin A was solubilized with oil by polysorbate 80,the destruction of vitamin A also depended on the peroxide values of oil. Vitamin A in such a solubilized solution was more unstable than that in oily solution under unaerobic conditions. On the other hand, vitamin A in solubilized solution by polysorbate 80 treated with hydrogen peroxide was also decomposed in proportion to peroxide values of polysorbate 80.
