- トマトサポニンの機能性と反応
Abstract
<p> Tomato saponin, esculeoside A (1) is a major constituent isolated from the matured fruits of Solanum lycoperisicum. Oral administration of 1to apoE-deficient mice significantly reduced serum levels of cholesterol triglycerides, and LDL-cholesterol and ameliorated the severity of altherosclerotic lesions. </p><p> In this study, we report the following new evidences, that is i) structural characterization of tomato saponins found in Italian canned tomatoes, and ii) chemical conversion of tomato saponins into pregnane derivatives by alkaline treatment followed by acid reaction. </p>
