Description
Bromelain is a major protease extracted from pineapple. It has been variously utilized in food, cosmetics, pharmaceuticals and clinical fields due its proteolytic activity and pharmacological effects. This review presents biochemical properties of this enzyme and research trends on its extraction and purification methods for industrial use and structure-function analysis.
