We examined the influence of tempe and boiled soybeans on the mutagenicities of 2-(2-furyl)-3-(5-nitro-2-furyl)-acrylamide [AF2], benzo(a)pyrene [B(a)P], and dimethylnitroso amine [DMN] for Salmonella typhimurium TA98 and TA100. The water-extracts from tempe or boiled soybeans inhibited the mutagenicitiy of AF2 for TA98 and TA100, and the ethanol-extracts inhibited for TA100. The ethanol-extracts from tempe inhibited remakably the mutagenicities of B(a)P and DMN for TA98 and TA100 in the presence of rat liver-microsome.
