Description

The effect of various phosphates to oxidation of ascorbic acid and sodium ascorbate (1mM) solutions containing 32μg%Cu^<2+>, was investigated. Sodium metaphosphate and sodium hexametaphosphate were shown to have excellent stabilizing ability, against oxidation of ascorbic acid, while pyrophosphate and tripolyphosphate had no stabilizing effect. The stabilizing effect of either metaphosphate or hexametaphosphate to ascorbic acid was fairly reduced by coexistence of pyro- or tripoly-phosphate, except in acid solution.
